Popular culture in much of the Western world has characterized food science, to some degree, as an object of suspicion. Myths abound popularized by social media. Misunderstanding of the true and wide-ranging nature of food-related sciences obscures the vital role they play in the production of food. Product development often includes laboratory testing for shelf stability, nutritional content, resistance to pathogen growth, and other properties. The field of food science is vast, and employment opportunities are diverse. We will explore some popular myths and the role food science plays in the products we consume.
